Why I Love This Recipe

This Velveeta queso recipe has the bold tomato and chile flavor of restaurant-style salsa mixed with rich, creamy cheese. I love serving it warm with homemade tortilla chips for a simple dip everyone can dig into.

It’s easy to make a smaller batch for snacking or double it for a crowd. Add it to a nacho bar or serve alongside jalapeno dip and easy taco dip for a game day spread.

  • Velveeta cheese: This is a smooth and creamy cheese that you can find in a large block or brick at your local grocery store. It is also known as liquid gold!
  • RO*TEL: Grab a can of diced tomatoes and green chilies to make this simple Velveeta cheese queso dip! I love the original but mild RO*TEL can be used for less spice.

How to Make Velveeta Queso

Make this Velveeta queso recipe two ways! Choose the quicker way with a microwave or if you are throwing a party the slow cooker way is best.

Velveeta and Rotel in a microwave safe bowl waiting to be melted and combined for an easy party dip.
  1. Microwave method: Place Velveeta cubes and diced tomatoes in a microwave-safe bowl. Microwave for 3 minutes, then stir and cook an additional 1-2 minutes until smooth. Transfer to a crockpot and keep on a warm setting until ready to serve.
  2. Crockpot method: Place Velveeta cubes and diced tomatoes in the bottom of the slow cooker. Cook on low for 1-2 hours, or until the dip is smooth. Turn to keep warm setting until ready to serve.

Recipe Tips

  • For a thicker queso: Drain some of the liquid from the Rotel before adding it to the Velveeta.
  • For thinner queso: Stir in a splash of milk, evaporated milk or heavy cream until it reaches your desired consistency.
  • Keep it warm: Transfer the velveeta queso to a small crockpot and keep on warm for serving. Stir occasionally and serve with tortilla chips or pretzel bites.
  • Add more flavor: Stir in cooked sausage, diced jalapeños or sautéed peppers and onions. For a heartier version, try my sausage cream cheese Rotel dip.

Velveeta Queso Dip FAQs

Can I use Velveeta queso blanco?

Yes. Velveeta queso blanco works well and gives the dip a milder flavor and lighter color. You can also try my queso blanco dip for a homemade-style variation.

Can I use less Rotel?

Yes. Use half the can if you prefer less tomato flavor. You can also drain some of the liquid first if you want a thicker queso.

Can I make Velveeta queso without Rotel?

Yes. Substitute the can of diced tomatoes with green chilies, or use plain diced tomatoes and add chopped green chilies separately.

Why is my Velveeta queso too thick?

Queso naturally thickens as it cools. Reheat it gently and stir in a small splash of milk or evaporated milk until smooth again.

Can I make Velveeta queso on the stovetop?

Yes. Add the cubed Velveeta and Rotel to a saucepan and warm over low heat, stirring often, until the cheese is melted and smooth. Keep the heat low so the queso doesn’t scorch.

Can I make Velveeta queso ahead of time?

YeYes. Make it ahead, refrigerate it, then reheat gently on the stovetop, in the microwave or in a slow cooker. Stir occasionally until creamy again. Add a little milk if needed.

Notes

Variation: To kick this dip up a notch try mixing in 1/2 pound cooked sausage, sautéed bell peppers and onions.
Storage: Store leftover queso in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or on the stovetop over low heat, stirring often. Add a splash of milk if needed to loosen the consistency.
Freezing: I don’t recommend freezing Velveeta queso since the texture can become grainy or separate once thawed.
