With New Years just around the corner I have the perfect appetizer for you. We absolutely LOVE Mexican food around our house, so I was excited to try this easy queso dip.This recipe seriously has to be the easiest recipe around. Everyone loved it too. My friends were shocked when they found out there were only two ingredients.

Easy Queso Dip
Ingredients
- 1 lb. (16 oz) VELVEETA®, cut into 1/2-inch cubes
- 1 can (10 oz) Ro*Tel® Diced Tomatoes & Green Chilies
Instructions
- Combine ingredients in crock pot. Turn on low and cook for 2-3 hours.
- Can it get any easier than that?! I don’t think so. If you need this recipe to be even faster, you can put it in the microwave for 2-3 minutes.
Stir and Enjoy!
Serve with chips, crackers or veggies. This easy queso dip is SO yummy! The RO*TEL gives it the perfect kick!

I’ve been making this for years and my family loves it. To make it a little heartier we use a pound of ground beef or turkey which we have cooked and seasoned with one packet of taco seasoning. Happy New Year!!

We made this last night also! I did one with the hot Rotel and one with mild. I prefer the hot, and usually make that when I want a quick snack. Definitely quick and easy!

My mom makes this for every holiday! She does it a little differently – cubes up a small package of Velveeta and adds a little milk and pops it in the microwave. After it’s a nice consistency, she adds whatever salsa is on sale and it still comes out great every time!

I’m giggling at this because I’ve been eating this nearly my whole life and you just discovered it. You can make it a meal if you add taco meat into it! :) Not a very healthy meal, but a very delicious one! Way to make a great discovery!
