This s’mores pie is my kids’ absolute favorite! A friend made it years ago at a pie night and my whole family was in heaven. It’s got the perfect amount of gooey marshmallow and melty chocolate over a graham cracker cookie crust, and it’s become our go-to summer treat.

- Graham cracker cookie crust: Instead of a traditional graham cracker crust, this version gets a cookie-style upgrade by using two types of sugar, graham cracker crumbs, salted butter and an egg. It’s soft, chewy, and golden around the edges!
- Marshmallow creme: This creamy, spreadable layer melts into the chocolate and stays gooey even after baking. Try making your own homemade marshmallow fluff!
- Hershey’s chocolate bars: Classic to any s’mores dessert. They melt into a rich, nostalgic center.
- Mini marshmallows: Toasted on top for that iconic campfire look and gooey finish.
- Optional graham cracker pieces: Press a few on top before serving for a bit of crunch and fun presentation.
How to Make S’mores Pie
Cream the butter and both sugars until fluffy, then mix in the egg and vanilla. Stir in the flour and graham cracker crumbs to form a soft cookie dough. Press about two-thirds of it into the bottom and up the sides of a greased pie pan. It doesn’t need to be perfectly even.
Spread the marshmallow creme over the crust. It’s sticky, so I drop it in spoonfuls first, then smooth it out.


Top with the chocolate bar pieces, using three of the bars and saving the last one for the top, then scatter the mini marshmallows over the chocolate.
Flatten the remaining dough into small two-inch disks and press them lightly over the marshmallows. It doesn’t have to look neat, the spots where marshmallow peeks through turn into the best toasty bits.


Bake at 350°F for 13 minutes, then add a few more marshmallows and the last chocolate bar on top. Return to the oven for 5 to 7 minutes until the marshmallows are toasted, broiling the last minute if you want them really golden.

Baking Tips
- Extra chocolate: Add a fifth bar or scatter some chocolate chips on top.
- Broil at the end: I turn the oven to broil for the last minute so the marshmallows get nice and toasty.
- Let it cool: Let the pie cool completely before slicing. This gives it time to set so the slices hold together instead of crumbling.
- Serving: Serve with a scoop of vanilla ice cream or a cold glass of chocolate milk. For a real chocolate lover’s version, drizzle on some hot fudge.

Ingredients
- ½ cup salted butter , softened
- ¼ cup light brown sugar
- ¼ cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 1 cup graham cracker crumbs
- 7 ounce container marshmallow creme
- 4 Hershey chocolate bars (1.5 ounce each)
- ½ cup mini marshmallows , plus a few more for the top
Optional: graham cracker, broken into pieces
Instructions
- Preheat oven to 350°F and lightly grease a 9" pie pan (regular, not use deep dish).
- In a large bowl, beat together 1/2 cup butter, 1/4 cup brown sugar and 1/4 cup sugar until smooth and creamy. Then mix in one egg and 2 teaspoons vanilla just until combined. Then stir in 1 cup flour and 1 cup graham cracker crumbs and mix until combined. Press 2/3 of the dough into the pan and up the sides of the pan.
- Carefully spread 7 ounces marshmallow creme over the bottom of the crust. Then place the chocolate squares on top (reserving 1 bar for the top). Then sprinkle with 1/2 cup mini marshmallows on top.
- Take the remaining dough and flatten small 2-inch disks. Then lightly press over the top of the marshmallows to cover. It's okay if some marshmallows pop through.
- Bake for 13 minutes. Then place a few more marshmallows on top and the remaining chocolate bar on top. Add broken pieces of graham crackers on top if desired. Then bake another 5-7 minutes, or until marshmallows are toasted. Broil the last minute if needed.
- Allow to cool at least 30 minutes before slicing. Then slice into 8 slices.
