- Tortillas: Flour tortillas are my preference, but corn tortillas work well too.
- Cream cheese: Soften it first so it blends smoothly into the filling. Sour cream or plain Greek yogurt can be substituted if preferred.
- Green chiles and spice: Use mild diced green chiles and enchilada sauce for less heat. For spicier enchiladas, use hot green chiles or add diced jalapeños. The chili powder and cumin add extra warmth and flavor.
- Green enchilada sauce: Las Palmas is my favorite, but any canned green enchilada sauce will work. You can also substitute salsa verde, although the flavor and heat may vary.
- Shredded cheese: I like a combination of cheddar and pepper Jack. Monterey Jack or sharp cheddar also works well.
How to Make Green Chile Chicken Enchiladas

Step 1: Combine the shredded chicken, cream cheese, garlic, chili powder, cumin, kosher salt, black pepper, lime juice, and diced green chiles in a medium-sized bowl.

Step 2: Spoon three Tablespoons into each tortilla and roll it up like a burrito. You may also add some extra cheese inside.

Step 3: Bake the green chili chicken enchiladas until nice and bubbly. If you want the top golden, feel free to broil the last minute. Watch carefully just in case it overflows.

- Prevent tearing: Warm flour tortillas in the microwave for 20 to 30 seconds until flexible.
- If using corn tortillas, warm some of the green enchilada sauce and briefly dip each tortilla before filling and rolling.

- Freeze for later: These are one of my favorite freezer meals. Assemble the enchiladas but do not bake. Cover tightly and freeze for up to 2 months. Thaw overnight in the refrigerator, then bake as directed, adding a few extra minutes if needed.

- 1 clove garlic , minced
- ½ teaspoon chili powder
- ¼ teaspoon cumin
- ½ teaspoon Kosher salt
- ¼ teaspoon ground black pepper
- 1 cup shredded cheese , I prefer a mix of cheddar or pepper jack
Optional toppings: Chopped cilantro, Tomatoes, Olives, Bell peppers, Sour cream, Lime
Instructions
- Preheat the oven to 350°F. Add about 1/3 cup enchilada sauce to the bottom of a 9×13-inch pan and set aside.
- In a medium bowl, stir 2-3 cups chicken, 4 ounces cream cheese, 1 clove garlic, 1/2 teaspoon chili powder, 1/4 teaspoon cumin, 1/2 teaspoon salt, 1/4 teaspoon pepper, 1 Tablespoon lime juice, and 1 can green chiles until combined.
- Spoon 3 Tablespoons into each tortilla and roll it up like a burrito. You may also add 1 Tablespoon cheese inside the tortilla, if desired. Place into the pan.

Oh no! Reading comprehension has left the building. I picked up some fire roasted green chilis put them in the slow cooker to finish while I was fixin the chicken to be shredded. After shredding the chicken I took my small can of G.C. sauce and put it in the blender with the fixings, seasoning and spices.took it all poured the floor of the baking dish with sauce then proceeded to mix it all into the bowl with the chix. So now its all rolled up sitting on a bed of sauce with cheese on top. Im thinking the X had sauce on top?
Oops. So now we defrost the other lb of chilis and fillet them to go over top. Im sure it’ll work out just fine…..
