Key Takeaways: Crispy Chicken Tacos

  • Quick and easy: Use shredded rotisserie chicken to have dinner ready in under 30 minutes.
  • Baked, not fried: The tortillas turn golden and crispy in the oven without the mess of frying.
  • Family favorite: Creamy salsa chicken and melted cheese make these tacos flavorful, filling and fun to dip.

Why I Love This Recipe

These baked crispy chicken tacos are like my sheet pan tacos with a creamy, cheesy filling similar to my creamy chicken taquitos. They’re crunchy on the outside and packed with flavorful chicken and melted cheese inside.

When we tested them, they turned out so crispy and delicious and were a big hit at dinnertime. They’re even better served with our favorite restaurant-style salsa and creamy cilantro lime dressing for dipping!

  • Shredded chicken: Use cooked shredded chicken or save time with a rotisserie chicken.
  • Taco seasoning: Adds plenty of flavor without needing several individual spices. Homemade taco seasoning or store-bought will work.
  • Salsa: Use your favorite mild or medium salsa, depending on how much heat you prefer. We love this copycat Chili’s salsa!
  • Cream cheese: Let it soften first so it blends smoothly into the chicken and creates a creamy filling.
  • Shredded cheese: A Mexican cheese blend melts well, but cheddar, Monterey Jack or pepper Jack would also be delicious.
  • Flour tortillas: Small 6-inch tortillas are easy to fill and fold and become golden and crispy in the oven.
  • Olive oil and salt: Lightly coat both sides of the tortillas with oil or cooking spray, then finish with flaky sea salt for extra flavor and crunch.

How to Make Crispy Chicken Tacos

Step 3: Arrange the tortillas on parchment-lined baking sheets, then lightly brush or spray both sides with olive oil. Don’t skip the oil because it helps the tortillas turn golden and crisp in the oven.

Step 4: Spoon about 1/4 cup of chicken filling onto each tortilla. Fold the tortillas in half, gently press them closed and sprinkle the tops with flaky sea salt.

Step 6: Bake for another 5 to 7 minutes until crisp and golden. Let them cool for a couple of minutes before serving with your favorite dipping sauces.

Recipe Tips

  • Don’t overfill: Use about 1/4 cup of chicken mixture per tortilla. Too much filling can cause the tacos to split or spill while baking.
  • Give them space: Arrange the tacos in a single layer on two baking sheets so hot air can circulate and crisp the tortillas evenly.
  • Oil both sides: A light coating of olive oil or cooking spray is the secret to golden, crunchy tortillas without frying.
  • Make them ahead: Bake the tacos ahead and refrigerate once cooled. Reheat them in the air fryer until hot and crispy for busy, activity-filled evenings.
  • Add some heat: Use medium or hot salsa, pepper Jack cheese or diced jalapeños for a spicier filling.

Crispy Chicken Tacos FAQs

Can I use corn tortillas?

Yes, but warm them first so they don’t crack when folded. Wrap them in a damp paper towel and microwave for about 20 to 30 seconds, then lightly coat them with oil before filling. Since corn tortillas are often smaller, you may need slightly less filling in each one.

Can I use a different meat?

Absolutely. Replace the chicken with the same amount of cooked shredded turkey, Instant pot shredded beef or pork. Seasoned ground beef taco meat or ground turkey will also work, but drain it well before mixing the filling.

What should I serve with crispy chicken tacos?

Make them a complete meal with Mexican rice or Mexican street corn salad. We also love serving them with tortilla chips and homemade guacamole for dipping.

Can I freeze crispy chicken tacos?

I haven’t tested freezing these yet, but I think they would freeze best before baking. Assemble the tacos, freeze them in a single layer on a baking sheet, then transfer them to a freezer bag. Bake directly from frozen, adding a few extra minutes as needed until hot and crispy.
