I’ve been in a salad mood lately, and this one seemed to hit the spot! I loved everything about it! And it looked so pretty! *Almost* to good to eat!IMG_7475-1

Zesty Spring Salad

Ingredients:

  • 1/3 cup almond slices or pecans
  • 2 TB sugar
  • Spring Mix Salad
  • 2 kiwis -peeled and sliced
  • 1 cup of strawberries -diced
  • 1/2 cup of raspberries
  • 1/2 cup of chopped celery
  • 1 avocado -peeled and sliced
  • 1 pear -sliced
  • zest of orange or mandarin oranges

Dressing:

  • 2/3 cup olive oil
  • 4 TB sugar
  • zest and juice of 1 large orange
  • zest and juice of 1 lime

Directions:

1. Caramelize nuts by mixing with sugar in small skillet over low heat until sugar melts.

2. Combine dressing ingredients in a jar and shake well.

3. Toss salad ingredients together with nuts, add dressing to coat and serve.

YUM!! This salad was so good! It would be good with grilled chicken on top as well. Perfect for summer time! You must try this!

  3. This looks soooo good! But, I will have to make it for me and my mom, cuz my hubby won’t like it. A good excuse to spoil myself.

    • Oh my hubby is the same way! I rarely make salads like this unless were going to a party since I’m the only one who will eat it. lol. He just likes lettuce tomatoes and ranch!

  4. This salad looks beautiful AND delicious! I may just have to invite some girlfriends over and make it. (No way would my hubby or boys appreciate a salad like this!)
