Crispy Oven Baked Sweet Potato Fries
Once I started making baked sweet potato fries in the oven at home, there was no going back. I now make all kinds of sweet potato sides like roasted sweet potatoes or air fryer sweet potato cubes but these are always the most requested.
As much as I love french fries or potato wedges, homemade sweet potato fries are hard to beat. They come out perfectly crispy in the oven and seasoned to perfection. I love dipping them in fry sauce or burger sauce, but honestly any of your favorite dipping sauces work great!
“This recipe is absolutely amazing and super delicious 🤤… the best healthy snack in my opinion!!!”
Recipe Ingredients
Baked sweet potato fries only require a few simple ingredients! Here is what you will to make these fries.
- Sweet potatoes: Four medium sweet potatoes work best. Look for ones that are longer and less curvy so they cut into even fries more easily.
- Oil: Olive oil or canola oil both work great. Canola oil gives slightly crispier results.
- Seasonings: I love the classic combination of kosher salt, pepper and garlic powder. Sea salt could be used in place of kosher salt.
- Cornstarch: The secret to extra-crispy fries! Toss the fries in a little cornstarch before baking for the best results.
Favorite Seasoning Ideas
There are so many different ways to customize your fries! I took the classic approach in this recipe, but below are a few of my other favorite spices.
- Spicy: Oil, kosher salt, pepper, garlic powder and paprika (or chili powder, cayenne pepper or easy chili seasoning).
- Cinnamon-sugar: Oil, kosher salt and cinnamon sugar.
- Rosemary: Oil, kosher salt, pepper, garlic powder and rosemary.
- Italian: Oil, kosher salt, pepper, garlic powder and Italian seasoning.
How To Make Baked Sweet Potato Fries
Follow these simple steps for perfectly crispy oven baked sweet potato fries every time.

- Cut sweet potatoes into matchsticks. Peel your sweet potatoes and cut off both ends. Slice in half horizontally, then cut halves vertically into 4 pieces. Slice again each piece vertically into 8 pieces then finally cut the sweet potato pieces into thin sticks, about 1/4″ inch thick and 3″ inch long.
- Soak fries in cold water: For extra-crispy fries soak uncooked matchsticks in large bowl with ice cold water for 30 minutes. Drain then pat dry and place in a zip-top bag with 2 Tablespoons cornstarch and shake until evenly coated.
- Place on baking sheet: Place the sweet potato sticks in a single layer on a baking sheet lined with foil or parchment. Toss with olive oil.
- Bake: Bake at 415°F for 15 minutes which is hot enough to crisp the edges without burning the natural sugars in the sweet potato. Sprinkle the seasoning mixture evenly over the fries, flip and bake an additional 10 to 15 minutes or until crisp
Use the air fryer: Instead of sweet potato fries in the oven, air fry them in 2 to 3 batches so the fries have room to crisp up rather than steam. Preheat the air fryer to 380°F and cook for about 12 minutes, turning halfway through, or until crisp.

Expert Tips
- Thickness: Cut to 1/4 inch. Any thicker and the outside can’t crisp before the inside overcooks.
- Evenly sized: One of the main keys to making the fries crispy is to cut them into evenly sized matchsticks so that they all bake the same.
- Peeling: While I like to peel them for smoother fries, sweet potato skins are edible and add extra texture and nutrition. Some say it also makes them crispier!
- Cornstarch: Add the fries to a bag and shake 2 Tablespoons of cornstarch on top so you have a thin coating. The starch coating helps absorb surface moisture so the fries crisp while baking.
- Oil: Use canola, grapeseed, sunflower or peanut oil for a crispier edge.
- Bake on a metal rack over a baking sheet: Elevating the fries lets hot air circulate underneath so you get crispy edges on all sides without flipping.
- Don’t overcrowd the pan: Spread the fries in a single layer with space between each one. Crowding causes steam to build up which makes them soft instead of crispy. Flip halfway through so both sides get evenly browned.

Serving Suggestions
These sweet potato fries are so flavorful you might not even need a dipping sauce! Try ketchup, BBQ sauce, garlic aioli, ranch dressing, honey mustard sauce or buffalo sauce.

Made them, tasted scrumptious. I always use a tiny bit of cayenne. Tried coating the fries with cornstarch and will do it every time now!
Sarah @IHeartNaptime
Yum on the cayenne! So glad you enjoy them!
Keena
I made these tonight and they were yummy
Sarah @IHeartNaptime
So happy that you love the sweet potato fries!
Hope
Followed the directions, including the water soak- pat dry well- cornstarch, and they were definitely flavorful but not at all crispy. I tried adding baking time which resulted in some lightly blackened spots on the bottoms of some but the tops were still quite soft.
Sarah @IHeartNaptime
Sorry to hear the method didn’t work for you Hope but glad they still had a great flavor!
Grace
I’m gonna give it a 5 star because without the extra crisp step it was fantastic!! But the cornstarch was hard to work with, I thought the fries were completely dry but they must not have been. I took them out of the bag and at first they seemed okay and then they seemed to start perspiring immediately. First time I did them I skipped the cornstarch but still did the soak and it was great! Crispy and seasoned to perfection! Wish I wouldn’t have tried to get fancier 😅
Sarah @IHeartNaptime
Thank you for the notes about the cornstarch Grace, glad it worked well for you without that step! We will be restesting this based on the notes, to it is very appreciated!

Totally disgusting! Find another recipe! DO NOT USE CORNSTARCH!
I followed the recipe exactly and they were inedible!
Sarah @IHeartNaptime
If using the soaking then cornstarch, the fries must be completely patted dry. Sorry to hear you had trouble with this optional step!
Julie
I followed the directions explicitly and was so excited as I LOVE sweet potato fries. I soaked in water and used the cornstarch. They were SO SOGGY. I held my entree on warm in my 2nd oven. ALOT of work to be disappointed.
Sarah @IHeartNaptime
After soaking the fries must be patted dry – really well. Hope that helps!
Darryl
Crazy undercooked. Needs double the time
Sarah @IHeartNaptime
Sorry to hear that the fries didn’t turn out as expected. All oven cook a bit differently, sounds like yours needed a bit longer.
Claudia
The cutting of the sticks isn’t very easy, but I managed. Mine stuck to the foil after I baked 15 minutes, after the 30 minutes they hadn’t crisped. So, didn’t work for me, disappointing.
Sarah @IHeartNaptime
Hello, if using foil, I recommend spraying the foil really well. For crispier sweet potato fries, try soaking them in ice water first next time to remove excess starch.
Sue G
Foil is terrible to use with sweet potatoes because of their sugar content. They will definitely stick. Use parchment paper!
Sarah @IHeartNaptime
Thanks for the tip Sue!
Angela
Hi. Can the potatoes stay in ice water longer than 30 minutes. Just trying to time it for company ;-)
Thanks
Sarah @IHeartNaptime
That would probably work although remember to account for draining and patting them dry.
Jbv
Great

Did all the steps and were soggy
Sarah @IHeartNaptime
Try following the extra crispy sweet potato fries instructions in the notes next time to ensure crispy results :)
Rachel
SO GOOD!! I didn’t use the extra crispy hack of soaking them in cold water so they ended up a little soft, but I will do that next time. Nevertheless the seasonings were perfect and they turned out amazing!
Sarah @IHeartNaptime
So glad you enjoyed them!
Amber
We love sweet potato fries, even if they don’t get super crispy. But now my new oven has an air fryer feature and I’m trying it out for the first time! I’m so excited to see if we notice a difference!
Anne
Delicious! Thanks for the amazing recipe!
Sara
Wanting to make these to save throughout the week. Any clue on how they would save or freeze?
Jamielyn Nye
Hi! I haven’t tried freezing them, but if I were to meal prep these for the week, I would probably cut them into wedges and leave the skin on so they don’t go soggy. Then when I reheat them I would reheat in the air fryer, in the oven or stove top if you want to get them crisp. If you are microwaving them they will be soft.

Made these tonight and they were delicious!

Yay! Love to hear that. Thanks for sharing and giving a 5 star rating!

I love these sweet potato fries! So easy to make and they taste great. The spices are spot on, they are full of flavor.

Thanks for the tip about soaking then in water and coating in cornstarch. I made them in the air fryer, and they were amazing!
