    We love to grill skewers in the summer time. They’re simple, taste delicious and are fun to enjoy. These grilled shrimp skewers are a great option, as well as chicken kabobs, veggie kabobs or even grilled glazed fruit kabobs. So yummy!

    Summer is right around the corner, which means it’s time to break out your grill and get barbecuing! And first on the list? These grilled shrimp skewers! They’re easy, healthy and absolutely delicious. Plus they’re served with a fresh mango salsa that’s easy to whip up and full of flavor.

    My husband is usually our grill master. I get sort of nervous grilling meats because I’m never sure when they’re done cooking. I’m always afraid of overcooking and undercooking. But when it comes to shrimp, that’s my specialty. I always know when it’s done cooking because it turns from gray to pink – easy peasy!

    One of the reasons why these grilled shrimp skewers are so awesome is because there’s no frying or covering in sauces. This shrimp is marinated in a deliciously simple garlic oil marinade that’s quick to make and adds so much flavor. Another reason is because simply put, skewers are cool. Everyone likes grilled meat or fish on skewers!

    For super flavorful shrimp skewers, it’s important to let the shrimp soak in the marinade for about 2-6 hours. I love this shrimp skewer marinade because it’s simple, yet has a bold flavor.

    • Olive oil
    • Lime juice
    • Garlic
    • Salt
    • Pepper

    NOTE: For a stronger garlic flavor, heat olive oil in a medium saucepan over low heat. Add sliced garlic and cook until soft. Then add 1 Tablespoon lime juice, pepper and salt. Let cool, then pour over shrimp to marinate.

    I never make shrimp skewers without making this fresh mango salsa. The two pair perfectly together and taste so flavorful and delicious.

    Mangoes can be a little intimidating to chop, but I promise it is so simple! Check out this step-by-step tutorial that shows how to cut a mango the easy way.

    Ingredients

    • Mangoes
    • Cilantro
    • Jalapenos
    • Green onions
    • Salt & pepper

    Instructions

    Mix together chopped mangoes, cilantro, jalapenos, green onions and remaining 1 Tablespoon lime juice. Taste and add salt and pepper if needed. Refrigerate until ready to use.

    NOTE: Can add in extra ingredients like chopped red bell pepper or use red onion instead of green (like this mango salsa recipe). Also, feel free to make a pineapple salsa instead if preferred.

    How to grill shrimp skewers

    • Make marinade. In a small bowl, whisk together olive oil, garlic, 1 Tablespoon lime juice, salt and pepper.
    • Assemble skewers and marinate. Thread shrimp onto soaked skewers and place in a 9×13 pan. Pour marinade over shrimp and cover with saran wrap. Place in fridge to marinate for 2-6 hours.
    • Make mango salsa. Mix together mangoes, cilantro, green onions, jalapenos and remaining Tablespoon lime juice. S&P to taste. Place in fridge until ready to use.
    • Grill the shrimp skewers. Preheat grill to high heat. Grill the marinated shrimp for about 3 minutes on each side. Shrimp will be pink and firm. Remove from grill and serve with mango salsa. Enjoy!

    TIPS:

    • The shrimp must be peeled before marinating and grilling. Check out this easy tutorial.
    • Be sure to soak your wooden skewers in water for 15 minutes to keep them from burning. Alternatively, you can use metal skewers instead.
    • You can use frozen uncooked shrimp, however make sure they are thawed completely before grilling.
    • I wouldn’t recommend using precooked shrimp. It has a tendency to taste rubbery and extra chewy when grilled.

    • Over rice: Shrimp with mango salsa tastes amazing served over white rice or cilantro lime rice.

    • Lettuce wraps: Take the low carb route and serve mango shrimp inside a lettuce wrap.
    • More grilled sides: While the grill is hot, try making grilled veggies or corn to serve alongside the shrimp skewers.

    • 2 pounds uncooked large shrimp , shelled
    • 6 wooden skewers (soaked in water for 15 minutes)

    Marinade:

    • 5 Tablespoons olive oil
    • 5 large cloves garlic , thinly sliced
    • 1 Tablespoon fresh lime juice
    • 1 teaspoon salt
    • 1/2 teaspoon pepper

    Mango Salsa:

    • 2 ripe mangoes , peeled and chopped
    • 1/2 bunch cilantro , chopped (leaves only)
    • 2 jalapeños , seeded and finely diced (or less depending on heat preferences)
    • 1 bunch green onions , thinly sliced
    • 1 Tablespoon lime juice
    • salt and pepper , to taste

    Instructions
